Buried in all the returning favorites from this year’s EPCOT Food & Wine Festival Foodie Guide is one genuinely new addition, and it’s a cheese lover’s dream come true!

Say hello to The Wedge, hosted by Dairy Does More.
The Wedge sets up shop in CommuniCore Hall, running September 18 through November 8, and it’s tied directly to Cheers to Cheese, the interactive cheese-history exhibit opening in that same space. So this isn’t just a booth that happens to serve cheese — it’s built specifically around the whole cheese celebration happening in that corner of the park this fall. Finally, an exhibit and a snack booth that are actually in on the same bit.

Here’s the full menu: a Selection of Cheeses with accompaniments featuring Proudly Wisconsin Cheese, for anyone who wants the straightforward cheese-board experience.

Then it gets more adventurous — a Crab and Corn Macaroni and Cheese with smoked cheddar sauce, bacon, crab seasoning, roasted corn, herbed panko, and jalapeños (this one’s actually a returning recipe originally introduced back in 2015 at Farm Fresh, so it’s new to The Wedge but not new to the festival’s history).

Rounding out the mac and cheese lineup: a Three-Cheese Macaroni and Cheese with smoked cheddar sauce and herbed panko…

…and a Cheesesteak Macaroni and Cheese…

…loaded with shaved beef, peppers, onions, and herbed panko. I already know which one I’m getting seconds of, and it’s not even close.
On the drink side, there’s a brand-new Wine and Cheese Pairing…

…a Cannoli Milk Shake topped with chocolate shavings, a cannoli shell, and a maraschino cherry (non-alcoholic, but no less indulgent)…

…plus new wine additions (Bodegas Avancia Old Vines Godello and Las Jaras Superbloom Rosé) alongside the returning Caymus Vineyards Cabernet Sauvignon and a full wine flight for anyone who can’t just pick one.
Between the mac and cheese lineup, the wine pairing, and a milk shake that’s basically dessert and drink in one, The Wedge is shaping up to be a serious contender for busiest booth at this year’s festival — especially paired with the Cheers to Cheese exhibit right next door.
Which item from The Wedge’s menu are you most excited to try? Let me know!
